Healthy Kids Cooking Class
Virtual EventEnjoy cooking a healthy meal with your kids that's full of veggies with Nicole Estrada, personal chef and owner of Fresh Creations. While we prepare our meals, Nicole will also provide tips on how to create meals for your family that are both healthy and delicious.
Nicole is asking that have their ingredients ready for each recipe. This will ensure the cooking class will run smoothly. She asks that we have the veggies cut and everything measured out. It's not a problem if you don't but it will be better if you do so we have time for everything 🙂
Veggie Lovin’ Mac N’ Cheese
Yield: 6-8 servings
Ingredients:
• 1 head cauliflower, cut into florets
• 2 tablespoons of oil
• 1 1/2 cups raw cashews (soaked in water for 2 hours)
• 3 tablespoons fresh lemon juice
• 3/4 cup water
• 1 1/2 teaspoons fine sea salt
• 1/4 cup nutritional yeast
• 1/2 teaspoon chili powder
• 1 clove garlic
• ¼ - ½ teaspoon turmeric
• 1 teaspoon mustard (optional; spicy brown or yellow)
• 16 ounces Elbow or shell pasta of choice (gluten-free, if needed)
• freshly ground black pepper
• Optional: 1-2 cups fresh or leftover roasted or sauteed vegetables (i.e. peas, carrots, spinach, squash)
